SMALLER AMOUNT:
1½ c. flour
1/3 tsp. Soda
2¼ tsp. baking powder
2 tsp. Sugar
1/3 tsp salt
2 eggs
buttermilk
Note from Janet: Above is the recipe which Mother made most often.
Cheesy Pups
2 c. Bisquick baking mix
½ c. shredded Cheddar cheese
10 bacon slices
½ c. cold water
10 frankfurters
Stir baking mix, cheese and water with fork to a soft dough. Divide dough into 10 equal pieces.
Pat each piece of dough around a frankfurter, making a thin covering. Wrap a bacon slice around dough, securing ends with wooden picks.
Cook over high heat rotating frequently, 15 minutes or until bacon is crisp and biscuit cooked. Makes 5 servings.
Doughboys
5-ounce can refrigerated biscuits American cheese cut into l" cubes
Spam cut into 1" cubes Shortening
pickle relish
On the end of a skewer that has been rubbed with shortening, place a ham or cheese cube; around cube wrap one of refrigerated biscuits. Let each person toast his own Doughboy over hot coals, placing it about 5" away and turning slowly until golden-brown on all sides and done — about 5-10 min. in all. Then it’s slipped off skewer and enjoyed with a garnish of pickle relish.
Plain Waffles
2 c. flour
2 c. milk
2 eggs, beaten separately
3 tsp. baking powder
½ tsp. salt
4 tbsp. melted butter
Sift flour, salt and baking powder into mixing bowl. Beat yolks well and add milk and beat, adding this to the flour slowly beating until perfectly smooth. Then add melted butter and fold in whites stiffly beaten.
Skillet Biscuits
1/3 c. butter or margarine
2 cups Bisquick baking mix
½ c. cold water
Melt butter in 8" foil pan over low heat. Pour half the butter into another 8" foil pie pan. Rotate pans until butter covers bottom and sides of pan. Stir baking mix and water with fork to a soft dough.
Drop dough by spoonfuls into hot butter in one pan. Pour butter from other pan over biscuits; invert pan over pan with biscuits. Secure rims together with spring-type clothespins.
Cook over low heat 5 min. on each side. Ten 2" biscuits.
Note from Janet: The above two recipes were meant for outdoor use on a Coleman stove. Since Mother never camped, I can only think she did these in her kitchen with regular frying pans.
